An Audience with Nicolas Joly
"Biodynamie is a system, an accoustic, and it can takes a lifetime to develop an accoustic that works, not unlike training a child to be autonomous. Once you are there you reach a level of originality of balance that cannot be replicated."

Nicolas Joly visited New York last week to share his extensive knowledge and understanding of the principles behind biodynamie in a series of seminars, accompanied by a comprehensive tasting of his wines including a vertical tasting of the fabled Coulée de Serrant.

When asked why he chose to adopted the practices he answered: "Fate. Why do you do anything. If you look back, you don't know why you do anything..."

He went on to explain that biodynamic principles employ age old methods to simply create an atmosphere in harmony with the rhythms of nature that affects the wines that are a product of that atmosphere. He describes the forces behind two ways of making a wine: (1) where organics of the soil are destroyed and instead the wine is manufactured in the cellar or (2) pull the right "forces" in the vineyard so that in the cellar, once the wine is pressed, the winemaker does nothing.
