Fermentation Method: The process begins with hand-cut, unburnt sugarcane. The green frothy juices are then immediately extracted from the cane. Using natural yeasts and a natural fermentation process, the juice is transformed into an alcoholic base, which is distilled in a traditional copper pot still. Just like the rest of the farm the distillation process lets nothing go to waste. The steam heat for the still is even fueled by clean burning pressed sugar cane biomass.
Duration And Aging Method: Aged in American oak for five years.
Alcohol Content: 43%
